Another one of my birthday gifts was a spiral vegetable slicer and I have been making zoodles (zucchini noodles) like crazy! For lunch this week, I made a Greek salad with zoodles and it was delicious! We also had zoodles with marinara and Italian sausage for dinner. I can’t wait to try different veggies and different recipes.

I mentioned this earlier this week, but Greg and I had such a great time at the USA women’s soccer game on Sunday. Live soccer is so much fun! Also this week, the Orlando Pride (our newly announced women’s MLS team) signed it’s first players, including Alex Morgan! I am definitely becoming more of a soccer fan!

Two Years Old

Crosby is two years old! However, every time you ask him how old he is going to be, he replies with “be three!”. Sorry buddy, time is already flying, we’re not passing by a whole year! That pretty much sums up the C man though, he definitely thinks he’s older than what he actually is…I guess that’s what comes with having an older sibling. Anything Kenley does, Crosby tries to do, why wouldn’t he think he’s going to be three?

2 Years Old

One big change this month was that we have decided to stop using cloth diapers. It is actually a much bigger change for Greg and I, than it is for Crosby, and I am still coming to terms with the decision. After returning home from Key West, Greg and I were both just over it. We dreaded doing the laundry and everything else that came with it. At that exact time, Target was having a huge sale and gift card deal on their boxes of diapers, so we bought three boxes that will hopefully last us through the next several months. It was clearly our decision, but it is still an adjustment considering we have been using cloth diapers for four years now. I would still recommend cloth diapers to everyone and can talk to anyone about them for hours on end, but with having two active toddlers, it’s just easier to do disposables. While I am a little bummed that we didn’t make it until the end, I can’t even begin to tell you how proud I am to say that we cloth diapered two children for four years straight. Don’t even get me started on how much money we saved over the course of those four years.

Another reason for the decision is that we have been introducing the potty more and more. I was thrilled to see that Crosby’s name was on the potty chart at school, so I know they are doing the same thing. A couple of his older friends have stars on the chart, so hopefully Crosby will start following in that direction. We get reports that he does sit on the potty, so that’s a step in the right direction in my book.

Crosby has turned into a talking machine. He is doing very well with his ABC’s and numbers, as well as singing some of the popular nursery rhymes. His colors still need some work. The drive to school in the mornings are becoming more interesting since majority of the time both kids are talking at the exact same time. I remind them that they have to take turns, but Crosby doesn’t quite get it yet, so it just turns into them trying to talk over each other. Now that his car seat is forward facing (another big change this month!), he loves to point out everything he sees as we are driving. He is doing a great job with his words and he is a little parrot.

This month Crosby took his last airplane ride as a lap child. He now has a Rapid Rewards number and will get his own seat on our next flight in December. He loved being at the airport and watching the planes take off and the trucks go here and there. He was in heaven.

by the time i got home on friday, the kids had already gone swimming, taken a bath, and were in their pjs! daddy doesn’t mess around. that left us time to go for a walk around the block to check out the “spooky” decorations.

friday night and saturday morning was dedicated to birthday party prep!

saturday afternoon was birthday party time! i didn’t get nearly enough pictures, but i will share what i do have soon.

sunday morning started at 4am with the lake nona half marathon! again, more pictures to come.

greg and i headed down to the usa women’s soccer game against brazil at the citrus bowl in the afternoon. it was our first time there and our first time seeing a live soccer game. it was super fun and really exciting!

afterwards, we headed downtown for dinner & drinks with friends before falling into bed at 9pm from pure exhaustion.

A couple months ago, I posted a picture on Instagram of our version of Sunday Funday, which included packing lunches in our favorite Bentgo Kids lunchboxes. It turns out that Bentgo used said photo in a blog post last week: 5 Ways To Simplify Your Healthy Lunch Routine. We take our lunch making very seriously and make a point to pack healthy lunches for everyone, so I am very excited to be a part of such a great post!

The last two weeks have been birthday weeks in our house! This week Miss K turned four and she woke up to a donut surprise with four candles.

Speaking of birthdays, one of my gifts this year was an air popcorn maker. Greg and I may be obsessed. We already love popcorn, but a introduce me to a healthier version and I’m all in. I’m going to start getting creative with the different toppings to make it even better. Don’t worry, I’ll share some recipes!

Key West SoMo 10K {Race Recap}

About a month after we booked our trip to Key West for October, I was scrolling through the list of must-do marathons of 2015 on Runner’s World. Much to my surprise, the Key West Southernmost Marathon was on that list and it was the weekend that we were arriving in Key West. The marathon and half marathon were held on the day we arrived, so running the half marathon was out of the question, but I did notice the 5K and 10K were being held the day after we arrived… awesome! I signed up for the race knowing that I would be forced to get in my training run that weekend even though we were on vacation and I could do another destination race.

The race didn’t start until 8am. On one hand this was good since it would be daylight when I had to leave and I had no idea where I was going AND taking a cab at the same time. I felt much better being about to see where I was going rather than it being before the sun came up. On the other hand, the sun was blazing down on us as soon as the race started and it was HOT.

The race started at Salute! On The Beach which is a restaurant located directly on the man made beach in Key West… I later learned about it being a man made beach on our trolley tour of the island, which I will definitely share more about. The 5K and 10K started together and it was a relatively small race.

The course took us up A1A for 3.1 miles and we turned around and headed back to the restaurant. It was great overlooking the water for most of the race, but the sun was also beaming down on us the entire time and there was no breeze whatsoever. I really wish I would have brought my Camelbak or water bottle, but neither made it into the suitcase. There was water available on the course and I stopped at every water stop to grab a cup or two, but the water was so warm… so it definitely did not hit the spot. Not to mention, I probably did not hydrate well leading up to the race, so that didn’t help. As the race went on, the more drained I got.

I started with a solid pace, but looking back it was too fast for how hot it was. My last mile was significantly slower than the first five and I walked more towards the end. I was so ready for it the race to be over! You can see my forced smile around mile five, but the next picture is a true representation on how I felt… beat!

I finished 6.2 miles in 1:04:13 which was a 10:21 min/mile pace which gave me 4th place in my age group, 16th of the women, and 35th overall. I am pleased with my time, but knowing how much I slowed down at the end of the race, I know I could have done better. I am still convinced that the 10K race is my least favorite. I am not sure why, but I feel like it is such an awkward distance.

I am so glad I got to run this destination race in Key West and I going to start making it a point to look for races every time we travel!

It’s amazing how much Kenley has grown over the past year. She has transformed from a toddler to a little girl and sometimes acts like she’s a teenager…. (hence threenager). Being three was hard at times, but she learned so much this past year and has really come into her own. She has been to the dentist twice and really hasn’t been a fan of it either time. She got three stitches in her forehead after falling on the playground at school. She currently knows the days of the week, the months of the year, and has been working so hard on counting to 100 (only needing a little help here and there). She can spell her first and middle name, as well as Crosby’s name; and we’re still working on spelling her last name. It’s a long one! Her memory is outstanding and really baffling sometimes. She’s also a little too smart for her own good too. Preschool has been going so well after it took about a week or so to transition into routine in the new room and her behavior has improved immensely. She’s a big helper around the house and makes her bed every single morning (unprompted). She also helps out with setting the table and putting her clean laundry away when she’s asked. Bedtime is still a challenge, depending on the day, but I think that is too be expected at this age. She’s a great eater and loves her veggies more than anything — hence her favorite food. She occasionally will say that she doesn’t like something, but by the next time she eats it, she forgets about it… again, just being three.

we arrived back home on thursday to our new bed (in a box!). so far, we love it!

i was off on friday and had the morning to myself to catch up on some schoolwork. it was in the 60s, so i enjoyed the weather while i could outside.

kenley had a soccer game on friday night and saturday morning this weekend. she’s been doing a great job, but we’re still waiting on that first goal.

we had a small birthday party on saturday afternoon with just the four of us and we gave the kids their gifts. crosby hasn’t wanted to leave the train table since.

this morning was race day! we did the u can finish distance dare which is a 2 mile run and a 5 mile run on campus. it was super fun. i’m sure i’ll post more pictures of the race later.

we’re trying to get back into the swing of things since it’s back to the real world tomorrow, but still enjoying every second of october.

I know I’ve already mentioned it this week, but my mom and I spent the day shopping on Monday and it was amazing. We had such a great time and decided that Mondays are the days to go shopping. We pretty much had the mall to ourselves, so we took our time scoping out all the sales. One of my good finds was this eyelet-front sweater from Gap. I wish I would have gotten it in every color. It’s perfect for the Florida fall because it’s light and airy. It was cheaper in the store, but still a great deal right now. It does run big though… I ended up getting an extra small.

On that same note, the GapKids x ED collection is now on sale at Gap. The shirt I loved was out of stock (both in store and online), but I did get Kenley another cute shirt and these comfy pants. I really wanted a pair for myself. They are SO soft!

I don’t think I’ve mentioned here yet how much we’re loving that the fall TV shows are back! Our favorite right now is How To Get Away With Murder and I am STILL watching Grey’s Anatomy. I just can’t quit it. I think it’s still early enough for us to jump on the bandwagon for some new shows, so if you have one you love, let me know! I am definitely going to try to get into Scream Queens which I have heard great things about so far.

I will just jump right in and start gushing about how much I love October and how it is my favorite month of the year. If you don’t know, it’s my birthday month!! Of course, I was thrilled to find out when I met Greg (way back in 2006) that his birthday is only four days before mine — yay birthday week for us!! Fast forward to present time and I have since birthed two kiddos in the month of October so, it is officially birthday month for the Gilbos and we already have a jam-packed month of exciting things happening!

With all the fun that October brings, it also brings a cause that is near and dear to my heart – Breast Cancer Awareness month. During my undergrad years as a Zeta Tau Alpha, each fall we held our annual philanthropy event Big Man On Campus (BMOC) to raise money and awareness for breast cancer research. It was an amazing event and one that is still going strong today.

On that same note, it’s time for A Crucial Catch with the NFL! I loved seeing all of the pink gear last night during the Thursday Night Football game and I am excited to see it the rest of the month.
