Friday I’m in Love

Happy Friday and happy new year!

There is just something exciting about the first week of the year. We were back to work and back to school on Tuesday, so it was great to start the year with a four day week. I think we all were excited about a fresh start. We’ve been diligent about our work-out schedules this week, as well as keeping the house tidy after taking down all of the Christmas decorations. Here’s to making it a habit this year!

We have been really on top of our game this week with our breakfast, lunch, and dinners. I have been thinking about sharing our meal plan on a weekly basis, but for now, I’ll share it here. We did a lot of food shopping and prepping Monday, so I was really thankful to have that extra day this week to devote to getting ahead. For breakfasts this week, I made Italian Sausage Egg Muffins which been quick and easy to warm up each day. For lunches, Greg and I had jar salads. It was my first time doing these and I am hooked! They are so easy and super filling. Our favorite dinner this week was Buffalo Chicken Sweet Potatoes, but I’m also excited to try our Mexican Chicken Zucchini Boats tonight, inspired by this recipe. In the spirit of keeping it real, I will also share that the guilty pleasure we’ve been loving this week is the Cheez-Its Snack Mix. Oh my, that stuff addicting! I am hopeful we can keep this momentum going past the first week of the new year.

I have been getting back into podcasts lately. I haven’t listened to many since the first season of Serial, but the two I have been loving lately are Happy Hour with Jamie Ivey and I’ll Have Another with Lindsey Hein. Definitely check them out!

I am loving several books right now. Last month, I finished Emily Ley’s Grace, Not Perfection: Embracing Simplicity, Celebrating Joy and it was amazing! I highly recommend it for any woman in any stage of life right now. I am onto The Magnolia Story and loving it so far. I am hoping to get it done before my classwork ramps up. I also got a couple cookbooks for Christmas too which is helping in the meal planning department: Run Fast, Eat Slow and Inspiralize Everything.

Disney – March 2016

Over the tail end of the kids’ spring break, we packed up the car and headed down to Disney for a little staycation with my parents. It was so nice to “get away” for a few days without having to actually travel anywhere. We had an action-packed long weekend, so brace yourself for a whole lot of photos!

We arrived at the Animal Kingdom Lodge on Thursday after the kids took a short nap in the car. We walked into our rooms to find the most amazing view ever — animals everywhere! We were hoping to have a room with bunk beds, but two full beds is what we got. We weren’t sure what to expect since we would be co-sleeping with the kids for the first time, but it worked out well. Thankfully, my parents’ room was right next door and the monitor worked perfectly!

Crosby was enthralled with the animals. They were truly amazing to see in action and you could see them from most of the spots in the hotel. He would wake up each morning exclaiming to “see animals!”.

The rest of the afternoon was spent at the pool and the playground, as well as exploring the hotel.Our friends from Indiana were down at Disney for spring break as well, so they came over to check out the hotel and visit for a little bit. We ended up getting dinner at the hotel and taking it up to our room to eat. The kids loved that there was actually a Disney Junior channel, so they got to watch their favorite shows before bed each night.

On Friday, we headed to Animal Kingdom! We knew it was going to be a late night considering the Hoosiers didn’t play until after 10pm, but we were up early and ready to go! We took advantage of Disney transportation while we were there, which was so convenient.

As soon as we got into the park, we headed straight for the African Safari. I truly believe this is the best ride in all of Disney World. We took over 50 pictures on this ride alone. We only waited about 20-25 minutes to ride, which is really great considering the ride itself if 22 minutes long. Almost all of the animals were out and about while we were on the safari and we were able to get very close to several of them.

After lunch and some kiddo rides in Dino Land, it was nap time. Kenley went right to sleep in the stroller, but Crosby wouldn’t fall asleep until he was in the Ergo. The boys rode Everest in the single rider line while mom and I enjoyed some beverages while the kids slept.

After the Lion King show, we decided to stop into the baby center since the skies were looking a little dark. Thankfully, we made it just in time. We camped out in the baby center and the kids watched some TV while we waited for the storm to pass. It was still raining, but we decided to head over to the Finding Nemo show. I wish I would have gotten a picture of the six of us under the world’s smallest umbrella because it was pretty humorous. Both the Lion King and Nemo shows were amazing!

The park had really cleared out after the rain, so mom and I went over to ride Everest in the single rider line and got right on and off. I was stuck in the front row, which is typically not my favorite place to be, but I survived. We lasted the entire day at the park with minimal whining and arguing. It was such a fun day!

Saturday morning, we headed over to the other pool on the property to go swimming, go down the water slide, and came back to see the animals eating right outside our room!

Lucky for us, the Mets were playing at Disney that weekend too so we worked that into our plans. ESPN Wide World of Sports is home to the Atlanta Braves for spring training and they played the Mets on Saturday. This was the only spring training game we got to see, but deGrom was pitching, so it was definitely worth it!

Later that night, we went bowling and had dinner at Splitsville at Disney Springs! It was a fun place, but it was hard to keep a certain 2 year old confined to our tiny area and bowling lane. It was also raining throughout the evening so we were walking very briskly with the double stroller through the masses of people to get to and from the bus stop. Needless to say, we were all in bed by 9pm that night.

Easter Sunday, we headed down to the lobby of the hotel to partake in the fun activities and meet the big man himself!

Before heading home, we went back to Disney Springs to have lunch at the T-Rex Cafe! It was a fun atmosphere and a neat place.

We had such a great weekend. The kids were so good and it was the prefect long weekend away. We are so fortunate to have such great opportunities for weekend adventures like this right here in our backyard.

Disney’s Animal Kingdom

We went to Animal Kingdom this past weekend with my mom. My parents were staying at Disney because my dad was attending a conference and Greg was working on Saturday, so we made a day of it. The kids and I got up on Saturday and headed down to the Grand Floridian to pick up Meemaw and we made our way to the park.

We had reserved our fast pass for the African Safari through the My Disney Experience app (which I highly recommended), but the wait was only 20 minutes when we arrived, so we got in line. I would say it was probably a little over 20 minutes by the time we got on the ride, but the kids were pretty good in line. We’ve been having a heat wave, so it felt like it was 90 degrees out and about 100% humidity, so we were dripping after about ten minutes in the park. The safari is the best ride at Disney, in my opinion, and probably the longest ride. We saw so many cool animals!

After the safari, it was already time for lunch! We walked through other areas of the park, including DinoLand where we rode some kid rides, and Asia. I had a fast pass for Everest, so hopped right on and rode it quickly by myself.

It was then time to see Mickey and Minnie! The kids were all about it, but I know they didn’t know what to expect. Once we got in there and saw how big they were, they were not as excited. Kenley reluctantly gave Minnie a high five after the picture was over and Crosby wanted nothing to do with them. Of course, afterwards, they kept talking about seeing Mickey and Minnie again. I am sure next time will be much better.

We hit up The Lion King show back in Africa which gave us a chance to sit down in the cooler temperatures. Crosby took a 15 minute snooze in the Ergo and that was all the napping that either of them did that day. The show was absolutely amazing and was Kenley’s favorite part of the day. Side note: she will tell you that her least favorite part was the It’s Tough To Be A Bug show which was a 3-D show with special effects (thrill level: loud, dark, and scary). In hindsight, we probably should have passed on it, but oh well!

We ran into Tarzan on the way out and Kenley was excited about getting her picture with him. I’m pretty sure she doesn’t know who he is, but that’s okay.

At the end of the day, we got a couple much-needed drinks and walked through the shops before heading back to the Grand Floridian to meet up with Grandpa and have some dinner. The kids loved hanging out at the hotel and by the time we hit the highway, they were both passed out in the car.

our advent calendar activities this weekend included driving around to see the christmas lights and making a gingerbread house! it was so fun.

Our First Trip to Magic Kingdom

We had our first official Disney World experience at the Magic Kingdom on Friday.

My goal for the day was to be go-with-the-flow and not get stressed out.
I think I did a great job of that, however, Greg may have other opinions.
We rode a few rides that were great for Kenley and she was wonderful waiting in line.
The longest line posted was 30 minutes, but we never waited more than 10-15 on anything,
without fast passes, which was so nice.

Our first ride was the tea cups!

By the time we were done with our first ride, it was lunch and nap time.
Surprise, surprise, we didn’t get to the park as early as we would have liked.
Kenley went right to sleep and Crosby slept most of the time we were there.

While they were napping, Greg and I walked through the Swiss Robinson Family tree house,
one of Greg’s favorites, then it was right back to ride rides!
We also rode Aladdin’s Carpet, Dumbo (or ephelants, as Kenley would say), and Under the Sea!

Much to our surprise, we found out that they were taping the Christmas Day special and parade that day.
This meant there would be only one parade at 5pm and apparently some other fun activities throughout the day.
As soon as we were in the park we saw Lara Spencer from Flea Market Flip!
We also got to see the taping of the Ne-Yo concert, complete with fireworks.

As it was nearing parade time (our one chance to see Mickey), we wanted to make sure we got a good spot on Main Street,
also a spot that was semi-close to the exit. We got to our spot around 4:45pm,
but since the parade began at Splash Mountain, it didn’t get to us until around 5:15pm.
Kenley had no idea what we were waiting for, so she was a little restless, but as soon as it started, she was hooked.

Mickey & Minnie were on the lead float, so we didn’t have to wait until the end to see them.

Here are a few pointers and how we survived our day.
Purchase tickets in advance or account for time standing in the ticket line.
We brought in a small cooler full of snacks, but I wish I would have brought some waters.
We took full advantage of the Baby Center. We changed diapers, I fed Crosby,
and we even bought some children’s Advil for Kenley who wasn’t feeling well.
It is very convenient!
It worked well for (both of) us to switch Crosby from the stroller to the wrap throughout the day.
Download the Disney app, so helpful! It has a map, wait times, etc.
We had every intention of heading back to the hotel room to nap,
but having a stroller that reclined was great!
It was great having Meemaw with us for our first time so the ratio of adults to children was 3:2;
and now we know we can survive the next time we venture to Walt Disney World!

Overall, our first trip to Magic Kingdom was magical!
